Gluten Free Show & Tell

A lot of my subscribers may not know that I was diagnosed with Celiac Disease about 6 years ago. This is when your body is allergic to gluten, and it is commonly found in many foods. The first two years after the diagnosis I was very scared to go out for meals and buy pre-cooked meals. I had spent two years testing recipes and living on meat and potatoes. Don't get me wrong, but I love to cook and I love my Italian! It was depressing when my doctor told me I can no longer eat pasta. 6 years ago, gluten free products were not so popular in the Vancouver area or in Canada in general. I did lots of research and tested many recipes I found online. Slowly over the last 4 years I have discovered numerous useful substitutions that you can use in place of gluten.

Corn Meal = Bread Crumbs
  • good for meatloafs, meatballs, and breading
Tapioca Starch, Potato Starch & Corn Starch = Thickening Agent
  • good for soups, stews, sauces
Brands that make gluten free products:
Glutino, Kinnikinnick, Udi's, Gluten Free Pantry are some brands. But there are a lot more.

I have noticed that I take a long time grocery shopping now. I have trained myself to read labels before I buy anything. Even if they are not labelled gluten free, you could probably find out by reading the labels. Some things to stay away from Molasses, Malt, Wheat, Flour, Barley, Rye, Couscous, Soy Sauce, Beer.
